Paneer Butter Masala

Servings: 2 to 3 Persons

Ingredients:
175 gram Paneer
2 medium onion,chopped
(1/2" ginger +  3-4 medium garlic cloves) Paste
5-6 fried cashew nuts
fine thick puree of 3 tomatoes
1/2 tspn garam masala powder
1 1/4 tspn coriander seeds powder
1 tspn cumin powder
1 tspn red chilly powder
1/2 tspn turmeric powder
1 tspn kasuri methi
1/4 cup heavy cream
salt  and sugar as per taste
3-4 tbspn butter

Method:
1. Make equal cubes of paneer and shallow fry them in butter till golden brown.
2. Make thick puree of tomatoes and keep it aside. Make ginger garlic paste.
3. heat 2 tbspn of butter in a wok. Add 1 tspn oil to the butter. Add ginger garlic paste and stir for a minute. Add chopped onion and stir till it becomes translucent. 
4. Add red chilly powder,turmeric powder, garam masala and coriander-cumin powder and some salt. Stir everything for 5 minutes or till aromatic.  Turn off the heat.
5. Grind onion mixture and fried cashew nuts together to make a fine paste.
6. Heat 1 tbspn of butter in the wok and add ground onion-cashew nuts. Stir for 2 minutes.
7. Add tomato puree , sugar and salt ,mix well. Cover the wok with a lid and let it cook for 8-10 minutes. Add crushed kasuri methi.
8. Add paneer cubes and mix gently.  Turn off the heat and cover the wok with lid. Let the paneer soak some gravy.
9.  After 5 minutes ,add heavy cream to the gravy and mix gently.
10. Garnish with mint or coriander leaves and serve with roti or naan.
