Pudina Paneer Paratha

Servings: 4 medium Parathas


Ingredients:
1 cup wheat flour
1 tbspn chopped coriander leaves
1-2 mint leaves
1/2 tspn turmeric powder
1/2 tspn salt
1 tspn oil
water for kneading dough
For stuffing-
175 grams fresh paneer
7-8 mint leaves
ginger-garlic-chilly paste (1/2" ginger+ 3 garlic cloves+ 2 green chilies)
1/2 tspn chaat masala
salt to taste
butter or ghee to shallow fry parathas
rice flour for dusting

Method:
1. Sieve wheat flour with turmeric powder, salt, chopped coriander leaves, chopped mint leaves and  1 tspn of  oil. Make medium soft dough. Add water in small small quantities while kneading. It will help to make dough soft and smooth. Cover and set aside for minimum 1-2 hours. 
2. Grind mint leaves with ginger,garlic and green chilly to make a fine paste. Crumbled paneer with your hand and add this paste to it. Combine well with your hand.
3. Divide the dough into 4 equal balls (2 1/2" in size).  Make 4 equal balls (2 1/2"-3" in size) of stuffing.
4. Roll out each dough ball into circles of 5” of dia. Put stuffing ball in the center of the circle. Fold the circle over the mixture ball and cover it from all sides. Make a tight fold. Don’t keep space between mixture ball and fold. It will help to spared mixture till the end of parathas while rolling.
5. Roll out parathas about 7"-8" dia circle. Don’t roll it very thin. Approximately maintain 4-5 mm thickness. Use rice flour for dusting.
6. Heat a pan and place a paratha over it. Spread some butter round it. Roast both the sides till completely cooked.
7. Serve hot with any raita.

  2. hi Geetha, I think tomato sauce or any kind of pickle is also a good substitute for raita.
