For batter-
1/2 cup urid dal + 1 1/4 cup rice/idli rava
2 cups finely chopped onion
1/4 cup chopped coriander leaves
2 green chilies,chopped
1 tomato chopped (optional)
salt to taste
1/4 cup oil
1 tomato chopped (optional)
salt to taste
1/4 cup oil
Preparation:
Wash and soak urid dal and rice separately in the water at least for 4-5 hours. Grind urid dal with 1/4 cup of water.Grind rice with little water. Mix both ground dal and ground rice together. Do not add too much water in the batter. Batter should be of medium thick consistency. Cover and Keep batter in a warm place. After 10-12 hours it will ferment. Add 1/2 tspn salt and mix well. If the batter is too thick add little water.Now your batter is ready to make uthappams.
Method:
1. Take finely chopped onion,chopped green chilies and chopped tomato in a bowl. Add chopped coriander leaves and mix.
2. Heat 2 tspn oil in a pan. Then drop a large spoon full batter on the pan in such a way so that it will spread round. Do not make very thick uthappam. Gently spread batter with bottom side of a small bowl or large spoon if needed.
3. Garnish uthappam with chopped onion-coriander leaves-chilies and chopped tomato. Press them gently with your palm. Spread a spoon full oil round it.
4. Cover pan with a tight lid. Let it steam cook for 3-4 minutes. take off the lid when bottom side wil cooked completely and turn light brown, turn up side down. put little oil and cook till light brown. serve uthappam with sambar and coconut chutney.
Tip: Use dry active yeast in winters for fermenting the batter. dissolve sugar in warm water. Dissolve yeast in that water. Cover it for 10 minutes and then add to the batter.
You can use the same batter for idli and dosa.
