Servings: 6 to 7 Vadas
Ingredients:
3 to 4 boiled and peeled potatoes
2-3 garlic cloves+ ½” ginger + 2 green chilies-grind to fine paste.
2 tbspn coriander leaves
4-5 curry leaves
¼ tspn mustard seeds
¼ tspn turmeric powder
1 tbspn oil
Salt to taste

Burger rolls (indian Pavbhaji pav)
For cover-
¾ cup chickpea flour
½ cup to ¾ cup water
¼ tspn turmeric powder
Salt to taste
Method:
1. Mash boiled potatoes. Add ginger-garlic-chilly paste. Add salt and coriander leaves. Mix well.
2. Heat oil in a small saucepan. Add mustard seeds. Let it crackle. Add turmeric powder, curry leaves and asafoetida. Give tadka to mixture of mashed potatoes. Combine everything with your hands until evenly coated.
3. make equal balls (approx 2”-3” in diameter)
4.for making cover- take chickpeas flour(besan) in a wok. Add turmeric powder salt and limited water. Don’t make batter very thin or very thick. Approximately add 1/2cup to ¾ cup of water. Check consistency of batter using spoon. Add more water if needed. Add a spoon of hot oil in the batter. It will help to make the cover crispier.
5. Heat sufficient oil in a wok (kadhai). Dip potato mixture balls in the batter and drop in hot oil. Deep fry each ball in a same way. You can put 2-3 balls at a time if the kadhai if the oil is sufficient to deep fry 2-3 balls. Put one drop of batter in the oil check that the oil is hot before deep frying wade.
6. Spread sweet tamarind chutney and green spicy chutney between bread put wada between it and serve hot.
