Ingredients:
1 Cup horse gram (kulith)
5 cups water
½ cup butter milk
1 tspn sugar
1 pinch red chilly powder
salt to taste
¼ tspn cumin seeds
¼ tspn asafoetida
5-6 curry leaves
2 green chilles.
¼ cup finely chopped corinder leaves.
1 tbspn oil for giving tadka
Method:
1. Soak horse gram in water for 8-10 hrs. Strain the water and keep them in a colander. Keep them in a warm place to sprout.
2. Pressure cook horse gram sprouts with 5-6 cups of water in 4-5 whistles. Horse gram sprouts take more time to cook soft.
3. Pour the water in a saucepan and keep horse gram sprouts aside to make usal.
4. Add sugar, salt, red chilly powder and coriander leaves to the water and bring it to boil.Then add buttermilk and mix well.
5. Heat oil in a small saucepan. Add cumin seeds and then chopped green chilly. Let the chilly become white. Add curry leaves and asafoatida and give tadka to the mixture (kadhan). Serve hot.
Tip: Kadhan is extremely healthy and tasty soup. You can serve it in rainy season or in winter. Especially this is good for kids (avoid green chilly if you are serving it to kids)
You can use black eye beans or green mung beans instead of horse gram.
