Servings: 2 to 3 Persons
Ingredients:
3 tomatoes
3 tbspn fresh grated coconut
½ cup coconut milk
¼ tspn cumin seeds
1 ¼ tspn red chilly powder
1 tbspn unsalted butter
1 pinch of black pepper
Salt and sugar as per taste
1 tbspn coriander leaves
4-5 mint leaves
Method:
1. Wash and boil tomatoes. Peel them and make thick tomato puree.
2. Heat butter in a saucepan and add cumin seeds. When u smell a nice aroma add fresh grated coconut and coconut milk. Add red chilly powder, black pepper and bring it to boil.
3. Add tomato puree chopped mint leaves and coriander leaves.
4. Add 2 ½ cups of water. Add salt and sugar. Mix well.
5. Boil soup for 5-10 minutes. Turn off the heat and serve hot with soup sticks or garlic bread.
