Servings : 4 Persons
Ingredients:
2 to 3 medium boiled potatoes
1 ½ cup finely chopped onion
½ tspn mustard seeds
1 tspn udad dal
½ tspn turmeric powder
2 dry red chilies
¼ tspn asafetida
3 tbspn shredded dry coconut
2 tspn lemon juice
5-6 curry leaves
2 tbsp coriander leaves
1 ½ tspn sugar
Salt as per taste
4 tbspn oil
Method:
1. Cut potatoes in small cubes. Heat oil in a wok and add mustard seeds. Let it crackle. Add dry red chilies broke in 2 pieces. Add curry leaves and udad dal,turmeric powder and asafetida.
2. Add chopped onion and stir for 2 to 3 minutes. Then add potato cubes. Add salt-sugar and stir well.
3. Add coconut and lemon juice. Steam cook for 5 minutes. Garnish with coriander leaves and serve with roti.
