Servings: 3 to 4 Persons
Ingredients:
1 cup basmati rice
4-5 button mushrooms,sliced
1/2 cup finely chopped onion
1/4 cup chopped spring onion
1" ginger piece, Julienned
1 tbspn soya sauce
2 tspn vinegar
1 pinch ajinomoto (MSG)
1/2 tspn black pepper
salt to taste
3 tbspn oil
Method:
1. Wash and soak rice for 5 minutes. Heat oil in a cookware and add soaked rice. Stir for 3-4 minutes till rice grains separate. Add hot water exactly double the amount of rice. (here 2 cups). Add salt and close the cookware with tight lid. Let the rice cook completely.
Remove the lid and transfer rice in large plate. let the rice becomes completely cool. Fluff rice with a fork to get a fluffy rice with separate grains.
2. wipe and clean the same cookware. Heat oil and sauté julienned ginger. Add chopped onion and stir for 3-4 minutes till onion becomes soft and translucent.
3. Add sliced mushrooms and stir. Add soya sauce,vinegar,MSG,pepper and salt. Stir for a minute. Cover cookware with a lid and let the mushrooms cook. turn off the heat.
4. Add spoon by spoon cooked rice in the cookware and mix well. Garnish with chopped spring onion and steam cook mushroom fried rice for 5 minutes on low heat. Serve hot with any gravy or salad.
