Ingredients:
1 cup julienned onion
¼ cup julienned carrots
½ cup julienned capsicum
6-7 spring onions ( 2" in length)
½ cup spiring onion, chopped
9-10 prawns/ shrimps (cleaned)
3-4 garlic cloves
2" ginger piece, julienned
1 pinch ajinomoto (MSG)
1 tbspn schezwan sauce
3 tbspn tomato ketchup
1 ½ tbspn cornflour/ cornstarch
Salt and sugar as per taste
¼ cup oil
Method:
1. Mix cornflour in ¼ cup of water. Addd 1 tspn schezwan sauce and ¼ tspn salt. Avoid lumps and mix well. Dip prawns in that and shallow fry till golden brown.
2. Heat oil in a saucepan and add onion. Stir onion for 2 minutes and add ginger and chopped garlic. Next add capsicum and carrots. Stir for a minute.
3. Add 1 tspn schezwan sauce, 3 tbspn tomato ketchup,1 tbspn soya sauce, ajinomoto and salt. Stir well and cook vegetables till half done. Add spring onion (2” pieces) and prawns.
4. For making sauce, in a bowl take 1 tbspn cornflour, 2 tbspn tomato ketchup, 1 tspn schezwan sauce, 1 tspn sugar, 1/4 tspn salt and 1 ½ cup of water. Mix well and avoid lumps.
5.Boil the mixture till it Becomes thick and then pour on stirred vegetables. Mix well. Garnish with chopped spring onion and serve with fried rice.
Tip: To make this dish vegetarian you can use tofu or paneer instead of prawns
