Muthia

Read this recipe in Marathi
Servings: approximately 25 Muthia

Ingredients:
1 cup wheat floor
1 tbspn chickpea floor
1/4 cup bhakri floor/ rava
1 cup fenugreek leaves
3/4 cup grated bottle gourd 
1/4 cup grated carrort
1 1/2 tbsn ginger-garlic-chilly paste ( 2 medium garlic+1/2" ginger+ 1 green chilly)
1/2 tbspn sesame seeds
salt to taste
1 1/2 tspn sugar
1/2 tspn red chilly powder
1/2 tspn turmeric powder
1 1/2 tspn coriander seeds powder
1 1/2 tspn cumin powder
2 tbspn oil to mix in the mixture(Mohan)
2 tbspn thick yogurt (curd)
oil for deep frying

Method:
1. Take grated bottle gourd in a bowl. Add grated carrot and chopped fenugreek leaves. Add salt,sugar,ginger-garlic-chilly paste. Add sesame seeds and nicely mix everything.
2. Add chickpea flour and rava. Add wheat floor as required. Add 2 tbspn oil and yogurt.Knead a dough. If required add some more yogurt but do not add water. 
3. Immediately make 1 1/2"-2" small balls and give cylindrical shape to that.
4. Heat sufficiant oil in a wok and deep fry muthia on low heat till brown.


Tips:
1.To check if oil is ready for deep frying, put a little piece of dough in the oil, it should sizzle and come up slow.
2. If you dont have enough  fenugreek leaves to add,You  can add 1/2 tspn roasted and powdered fenugreek seeds. It will enhance the taste of muthia.
3. If you keep grated bottle gourd for long after adding salt and other spices, it will start oozing water and dough will become very sticky so immediately add wheat flour to the mixture and knead dough.
