Muga Gathi

Muga Gathi is typical vegetarian goan dish of whole green gram(green mung beans). In konkni weddings most of the time it is a part of menu.

Read this recipe in Marathi 

Servings : 2 to 3 Persons 


Ingredients: 
3 cups green mung sprouts
1 cup of fresh grated coconut
7-8 raw cashew nuts
4-5 fresh coconut thin slices
1 tspn coriander seeds
1 tspn red chilly powder
1 green chilly
½ tspn sugar
Salt to taste
For tempering-
1 tbspn oil
4-5 curry leaves
¼ tspn mustard seeds
¼ tspn asafetida
Preparation:
1.Soak green mung beans overnight (9-10 hrs) then drain all the water and keep them in a strainer in warm place till they have ½” sprouts (approx 10-12hrs) .
2. soak mung sprouts in warm water. After 1-2 hours all the mung skin will float. Remove it and take white mung beans without skin for making curry. 


Method: 
1. cook white mung beans with 1 chilly and 1 ½ cups of water in pressure cooker. Make only one whistle and change the burner. Don’t over cook.
2. Soak raw cashew nuts in warm water and remove skin.
3. Roast coriander seeds. Grind roasted coriander seeds with fresh grated coconut and red chilly powder. Make fine paste.
4. Add this paste in cooked mung beans. Add sugar,salt,cashew nuts and coconut slices. Mix well. Add 1 cup of water and bring it to boil.
5. Give tadka of mustard seeds,asafoatida and curry leaves. Serve with roti or with rice.
