Servings: 4 persons
Ingredients:
For making ragda-
1 cup white vatana/ kabuli chana
1 tspn coriander seeds powder
1 tspn cumin seeds powder
1 tspn red chilly powder
1/2 tspn turmeric powder
salt as per taste
for tempering: 1 1/2 tbspn oil ,1/2 tspn mustard seeds, 1/4 tspn asafoetida
For making Patice-
4-5 boiled potatoes
1/2 tspn turmeric powder
1/4 tspn asafoetida
1 tbspn oil
salt as per taste
Tamarind sweet chutney
Spicy green chutney
1 cup thin sev
1 cup finely chopped onion
2 tbspn chopped coriander leaves
Preparation: Soak white vatana for 8-9 hrs in warm water.Then pressure cook them till they become tender (make more whistles) While cooking them add 1/2 tspn salt.
Method:
1. peel potatoes and mash them finely. Heat 1 tbspn oil and add turmeric powder and asafoetida to the oil. Mix that oil with mashed potatoes. Make 2" balls of mixture and press them with your palm to make it flat. Now your patice is ready for shallow frying. Shallow fry both the sides of patice till it turns brown.
2. Mash cooked white vatana and add some water to make it thin (don't make it watery). Add coriander seeds powder,cumin seeds powder, red chilly powder,turmeric powder and salt. Bring it to boil.
3. Heat oil in a small saucepan. Add mustard seeds. Let it crackle. Add asafoetida and give tadka to the ragda. Cover it with a lid.
4. In a serving plate, place 2-3 patice. Add 1/2 tspn spicy chutney. Add sweet tamarind chutney. Pour some hot ragda. Add some chopped onion and sev. Garnish with coriander leaves and then serve.
