Serving: 3 to 4 Persons
Ingredients:
5 to 6 fresh wheat chapatis ( 1/2 cup wheat flour,1/2 tspn salt,1 tspn oil,water)
1/4 cup finely chopped onion
1/4 cup crumbled paneer
3 tbspn finely chopped green beans
3 tbspn finely chopped carrots
3 tbspn finely chopped flower
3 tbspn finely chopped capsicum (green pepper)
3 tbspn finely chopped mushrooms
1/4 cup chopped tomato
1 tspn minced ginger
1 tspn minced garlic
1/2 tspn turmeric powder
salt to taste
2 tbspn spicy mint chutney
2 tbspn tomato ketchup
grated cheese for garnishing
2 tbspn butter
thread to tie frankie
Method:
1. For making chapatis, knead dough and cover it for half and hour. Roll out chapatis and roast them on pan. spread some butter on it and keep them covered so chapatis will stay soft.2. Heat oil in a wok and add minced ginger and minced garlic. Add chopped onion and Sautér for 2 minutes. Add turmeric powder and stir. Add all the vegetables except tomato and crumbled paneer. Add salt and mix well.
3. Cover wok and let it cook for 3-4 minutes. Then add tomatoes and crumbled paneer. Turn off the heat.
4. Put chapati in a plate and spread 1 tspn mint spicy chutney. Spread tomato ketchup. Then put subji (cooked vegetables) and gently roll the chapati. Tie that roll (frankie) with a thread so that it won't open. You can remove that thread afterwards.
5. Heat pan and put butter. Roast both the sides of frankie till it becomes golden brown. Garnish with grated cheese and serve hot.
