Gajrachi Koshimbir

Read this recipe in Marathi
Servings : 2 to 3 Persons 

2 cups grated carrot ( 1-2 medium carrots)
1 tspn lemon juice
1 ¼ tspn sugar
2 tbspn chopped coriander leaves
salt to taste
for tempering- 1 tbspn oil,1/4 tspn mustard seeds,1/4 tspn asafoetida,5-6 curry leaves,1 green chilly 

1. Take grated carrot in a bowl. Add salt,sugar.lemon juice,coriander leaves and combine well. 
2. Heat oil in a small saucepan/ Add mustard seeds. Let it crackle. Add green chilly into 2 pieces. Add curry leaves and asafoetida.
Give tadka to grated carrot. Mix well and serve. 

Tip: Cover salad imediately after giving tadka, it will help enhance taste and smell of tadka.
