Tomato Raita

'A red Spicy Tomato Raita'
Serving: 3 to 4 Persons

2 medium tomato
¼ tspn mustard seeds
¼ tspn asafoetida
3-4 curry leaves
¼ tspn fenugreek seeds
½ tspn red chilly powder
4 tspn grated jaggery
2 tbspn roasted dry coconut
salt to taste
1 tbspn oil


1. Chop tomato finely.
2. Heat oil in a saucepan. Add mustard seeds. Let it crackle.Add curry leaves and fenugreek seeds. When fenugreek seeds turn pinkish, add asafoetida.
3. Add chopped tomato and mix well. Add jaggery,red chilly powder and salt. Mix well. Let it cook for 5-10 minutes. Add jaggery if required.
4. Crush roasted dry coconut and add that to the raita. Mix well and serve.
