Solkadhi ( Kokum kadhi)

Servings: 2 to 3 Persons 


Ingredients: 
2 cups fresh coconut milk
4-5 kokum
1 green chilly
1 tbspn coriander leaves chopped
1-2 garlic cloves (optional)
1 ½ tspn sugar
Salt to taste 

Method: 
1. Put fresh coconut chunks in the mixer or blender jar with 1cup water. Take a thin cotton cloth and put it on a bowl so that the edges are draped over the side. You will be pouring the blended milk into this thin-cloth and then squeezing it out.
Start the blender and make a puree. Pour it on the thin-cloth and squeeze out the milk. Use the same fiber for one more time. Repeat the procedure to pour required quantity of coconut milk.
2. If you are using readymade coconut milk then take 1 cup of canned coconut milk plus 1 cup of water, as the canned one is too thick than the fresh one.
3. Soak kokum in ¼ cup of water for 30-35 minutes so that you will get the essence of kokum. Drain kokum water after half and hour and add it to coconut milk.
4. Add sugar, salt and chopped green chilly, mix well. Add crushed garlic cloves. Garnish kadhi with chopped coriander leaves and serve chilled. 

Tip: Kokum kadhi is good for digestion. In konkan people generally prefer kokum kadhi with fish or any kind of non veg meals.
